Chicken Enchilada Casserole
4- Chicken Breast (or other favorite meat) boiled approximately 45 minutes and then chopped
1-can of chicken soup (standard 8 or 12 ounce can)
1- can of cream of mushroom soap
1/2 cup chicken broth
1- tub frozen Buenos green chilies or 4 cans mild chopped green chilies
1- teaspoon ground cumin
2-cloves of garlic finely chopped
1/2 onion diced and sauteed in butter
2 packages of mixed blend Mexican cheese
24 corn tortillas lightly fried until soft
combine soups, chicken, green chili, cumin, garlic, onion, and broth to make the sauce. layer in a backing dish, tortillas, then sauce then cheese just like a layered lasagna. one layer at at time until ingredients are all used.
bake 350 until cheese is melted.

Apple Cinnamon Bread
1/2 cup Shortening.
1 cup sugar
2 beaten eggs
1 1/2 Cup ground apples or applesauce
2 cups flour
2 teaspoons cinnamon
1 1/2 teaspoons of milk
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon vanilla
cream sugar and shortening. add beaten eggs and applies. mix dry ingredients and add to creamed mixture. add milk, vanilla and 1/2 cup of nuts if desired. pour into 2 loaf pans. sprinkle top with mixture of 1 1/2 Tablespoons of sugar and 1/2 teaspoon of Cinnamon. Bake at 350 degrees for 40 to 45 minutes.
My own version of this recipe is to substitute butter for the shortening. Brown sugar or natural sugar for the white sugar. I use apples from my orchard in the fall . i use my own canned apple sauce which is another recipe i might add later.

3 Tablespoons ketchup
1/2 teaspoon soy sauce
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/8 teaspoon vinegar
3 dashes hot sauce
mix all ingredients together.
